| 2005 Cabernet Sauvignon Description The bold richness of Cabernet Sauvignon is Napa Valley's most sought after wine. That is why it is an excellent wine for cellaring for 10 years from its vintage date or more. It maintains its character and flavor becoming smooth and mellow. Our vineyard with its gravelly soil and mid-valley climate, we are able to obtain optimum ripeness. Harvest is early in the season-never picking any later than September, the fruit characteristics are fully developed. Traditional bell pepper and olive aromas are evident as well. Because of the concentrated fruit, we age the wine for two years, in a blend of French and American oak barrels. In 2005, our Cabernet has a well-rounded finish with good integration of fruit and oak. Aged in 80% French and 20% American (25% new barrels). This wine has aromas of raspberry and light cedar. 100% varietal, 14.3 alcohol and 1997 cases produced. Harvest Brix 24.2 Harvested 9/21/05 Aging 80% French 25% New 24 Months Other:
