 | | 2006 Chardonnay
Chardonnay, now the most widely grown white varietal in the United States, originated in Burgundy, France. There are generally two ways this wine is produced: barrel-fermented (with malolactic fementation during barrel aging), or stainless steel fermented with straight barrel aging. Chardonnay from the Chablis region of Northern Burgundy is generally made in the latter style, as the warmer summer results in fruit with lower total acids. Our similar climate and fruit prompt us to make our wine in this “Chablis” style, with crisp aromas and flavors due to the preservation of the acid and less barrel extraction. This wine is softened and rounded out by approximately twelve months aging in French oak (generally less than 20% new barrels).
In 2006, our wine has full fruit flavors of melon and citrus. Aged in barrels to create aromas of vanilla with a soft delicate finish of toasted oak.
